Ingredients
Pork meat (80% lean meat, 20% bacon), salt, sugars: dextrose and sucrose, natural flavors and spices. Antioxidant: E300 (ascorbic acid). Preservatives: E251 (sodium nitrate).

Description
Salami made from medium grain minced Italian pork meat selected from quality cuts and stuffed into natural casings.
It is then hand tied in the traditional bocconcino (morsel) shape, that is a small salami approx.
8 cm in length. Contains no dairy derivatives, gluten or GMO.

Curing
This process takes place in two distinct phases: a drying phase in which the product receives warm air in order to remove moisture for about five days and the actual curing phase in which temperature and humidity remain constant until optimal curing is achieved. The curing period, given the small size of the bocconcino, varies from 7 to 12 days.

Portions
The weight of each bocconcino is approx. 80 grams. The bocconcino salamis are traditionally tied in 6 piece chains, weighing a total of approx. 0.5 kg per chain.

Shelf life
The bocconcino raw salami does not have a pre-defined shelf life; nevertheless it is best consumed rather fresh, that is within 3/4 weeks of curing.
