Product type
Semi-cured sausage.

Pork meat (45% fat, 35% lean meat, 20% rind), salt, natural flavourings, spices and red wine. Sugars: dextrose, sucrose. Preservatives: E 250 (sodium nitrite). Antioxidant: E 301 (sodium ascorbate).

The name derives from the presence of rind in the mixture (also known as "cotica"), in a proportion of approx. 20%, which gives the cotechino its typical softness. This mixture is then stuffed into natural 'straight' or "curved" casings, hand tied and subjected to a short curing period.
To be consumed after cooking in boiling water for about 1 hour and a half.

In a dry place at between 0° C and + 4° C.

Shelf life
To be consumed within 20 days from date of manufacture.

Cotechino is available in the following sizes:
•  Straight: 400 g
•  Medium: 300 g
•  Toscanino: 150 g
