This process takes place in two distinct phases: a drying phase in which the product receives warm air in order to remove moisture for about five days and the actual curing phase in which temperature and humidity remain constant until optimal curing is achieved. The overall process lasts from 30 to 60 days, depending on dimensions.
Given the artisan nature of the product, use of only guaranteed natural casings and hand tying, Rosa salami portions vary according to individual customer requirements from a minimum of 500 grams to a maximum of approx. 1,2 kg. The traditional portion is approx. 0,9 kg.
