The raw sausage is a typical salami and cured sausage of Italian tradition. The name is derived from the operation of salting, which is necessary for preservation.

Bocconcino raw salami

Salami made from medium grain minced Italian pork meat selected from quality cuts and stuffed into natural casings.
It is then hand tied in the traditional bocconcino (morsel) shape, that is a small salami approx.
8 cm in length. Contains no dairy derivatives, gluten or GMO.
Cacciatore - raw salami

Cacciatore - raw salami

Salami made from medium grain minced Italian pork meat selected from quality cuts and stuffed in natural casings.
It is then hand tied in the traditional 'cacciatore' (hunter) shape, that is an arc approx. 15cm in length.

The "gentile" salami is made from a meticulous selection of italian pork, cleaned by hand and mixed with salt, natural flovourings and spices. It is piped into natural "gentile" gut which, thanks to its thickness, keeps the meat soft even when the salami is matured over long period of time. The aroma is intense and the flavour is delicate. PAT* certified product.
Turista - raw salami

Turista - raw salami

Salami made from medium grain minced Italian pork meat selected from quality cuts. Stuffed in the natural 'pealed' hog or 'straight' bovine casing. It is then hand tied or netted according to customer requirements.
This is the most widespread and well-known salami: 15 to 20 cm in length, weighing between 300 to 400 g per portion. Contains no dairy derivatives, gluten or GMO.

Salami made from medium grain minced pork meat selected from quality cuts.
Stuffed in the natural "large" intestine casing and hand-tied or netted.
Contains no dairy derivatives, gluten or GMO. Agricultural and food product Traditional (PAT) entered on national list of typical products of Piedmont.
