Ingredients
Pork meat (80% lean meat, 20% bacon), salt, sugars: dextrose and sucrose, natural flavors and spices. Antioxidant: E300 (ascorbic acid). Preservatives: E251 (sodium nitrate).
 
Description
Salami made from medium grain minced pork meat selected from quality cuts.
Stuffed in the natural "large" intestine casing and hand-tied or netted.
Contains no dairy derivatives, gluten or GMO. Agricultural and food product Traditional (PAT) entered on national list of typical products of Piedmont.
 
Curing
This process takes place in two distinct phases: a drying phase in which the product receives warm air in order to remove moisture for about five days and the actual curing phase in which temperature and humidity remain constant until optimal curing is achieved. The overall process lasts from 20 to 45 days, depending on dimensions.
 
Portions
Given the artisan nature of the product, use of only guaranteed natural casings and hand tying, Rosa salami portions vary according to individual customer requirements from a minimum of 500 grams to a maximum of approx. 3.5 kg. The traditional portion is approx. 1 kg.
 
Shelf life
Raw salami does not have a pre-defined shelf life; nevertheless it is best before 6/8 months from processing to fully appreciate the correct consistency.
